Fleur de Sel
Formed once a year. Gathered by hand.
Our fleur de sel is hand-collected from the coastal salt pans of Deir El Natour Monastery — among the oldest salt-producing sites in the Mediterranean. Each September, wind and sun form a delicate crystal crust on the surface of the salt pans, which is skimmed by hand before it has a chance to sink and dissolve. That narrow window is what makes fleur de sel rare: it can only be harvested once a year, in small quantities, entirely by hand.
Perfect for: finishing dishes just before serving — grilled meats, fresh vegetables, or good bread and butter.
